The Christmas Spirit is descending on my house – and I am ready to celebrate “Juleaften” (Christmas Eve). The cookies are being baked this morning, the “Flæskesteg” (roast pork with crisp pork rind) is ready for the oven. I peeled a ton of potatoes yesterday, so they are ready to be caramelized, and the red cabbage has been braised in red wine, vinegar & sugar. Apples and prunes will be roasting alongside the pork roast.
The traditional Ris á’l’amande (Danish-style rice pudding with chopped almonds) has been prepared, the whole almond inserted, and the dark, rich Cherry Sauce is done. Whoever gets the whole almond will win a special “Mandelgave” – an extra little gift – usually candy or chocolate.
I am expecting 15 for Christmas dinner and caroling tonight, so my paint brushes and palette have been temporarily put aside. The whole house is beginning to smell like Christmas, reminding me of past Christmases in Denmark. It’s a good feeling.
